Lucy was generous enough to take time out of her Editor-In-Chief duties to answer a few of my questions:
- · How did you learn about the 30 “superfoods?”
At SELF we cover nutrition news, along with diet behavior, recipes and workouts and these superfoods have been proven, through scientific research and studies, to rev up the body’s natural fat-burning abilities. By helping your body shed fat and speed your metabolism, just choosing the right food choices makes losing weight as easy as filling your plate— and when you start eating this way, your energy soars, you feel better and you actually want to work out!
· How often do you work out per week?
I workout daily before work, since it helps me focus and be emotionally and physically on my game. I enjoy training for a specific goal, like a race or to get faster and fitter, not necessarily for weight reasons, though I do find that working out is a great way to maintain a healthy weight and a toned body. But for me, it’s as much a mental as a physical benefit! It clears my head and helps me think better and problem solve. So when I get off my bike or out of the pool, I’m ready for the day ahead.
· Have you always been athletic?
Yes, I was a tomboy and a big athlete in high school and loved to row and ski and sail and run. I was always terrible at ball sports and later I learned that just because I had bad hand eye coordination (tennis was a practice in humiliation) didn’t mean I wasn’t athletic. Once I learned that I had strength, endurance and a dare-devil approach on the ski slopes, I found that I could be athletic outside the usual team sports definition that most kids do in school.
· What is involved in your training for triathlons?
I love to be outside, doing a sport or activity that allows me to enjoy that natural scenery and beauty of the Park or the running and biking trails in and around NYC. So for me, running, biking and swimming are ways to be fit and get this “natural” fix every day. Of course in the brutally cold winter days, I have to train indoors but that makes it all the sweeter to get outside in the spring summer and fall. So basically you bike, run or swim each day and cross train so you can avoid injury and be fit without getting bored.
· What is your favorite recipe from the book?
The Mediterranean Baked Salmon. I love fish!
Rub 4 ounces wild salmon with 1 teaspoon olive oil. In a baking dish coated with 1 teaspoon olive oil cooking spray, place salmon, 1 sliced red bell pepper, 1/2 sliced fennel bulb, and 10 small black pitted olives. Sprinkle with 2 teaspoons chopped fresh oregano and season with freshly ground black pepper. Bake at 375 degrees for 10 minutes; stir the veggies; bake until cooked through, 15 to 20 minutes more. Drizzle with lemon juice. Serve with 1/2 cup cooked quinoa.
· What lesson do you hope readers will take away from The DROP10 Diet?
It’s possible to lose weight and keep it off without depriving yourself. I love chocolate and eat it every day (dark of course—it’s a super food!) and I have my “happy calories” as wine or chips and Mexican food at least once a week. On the Drop 10 Diet, nothing is off limits and you can lose weight, have fun and feel full and satisfied. I did it, five years ago, and kept it off. So I wanted to share it with the rest of the world. It’s easy, if you know what to eat and you choose to eat mostly healthy foods.
